In the production, quick processing is followed by fermentation and 12-month ageing in French oak barrels, with periodical sediment stirring. Following the ageing in barrels, it is further blended and aged in stainless steel vats and in the bottle. Grimalda White is a terroir wine of pronounced minerality and long finish. Vanilla through which floral notes characteristic of the dominant Chardonnay project. Then fine fruity notes which move from orange peel and a little homemade peach towards, apricot. In the second wave notes of wet grass that and even wet black truffles. The wine is dry, partially warm and almost soft, but on the other hand even pleasantly cool, a bit of tannins are present. Special wine for special occasions.
