This prošek is a wine symphony of aromas, flavours, pleasure and health prepared in Dalmatia since immemorial. It has always been especially valued, so it was most often made for one’s own needs and kept for guests’ honour during family, national and religious holidays. In the time of the Romans, dessert wine was produced in Dalmatia from dried grapes, which they called Vinum Sanctum (sacred wine). In 1722, an Italian travel writer wrote about the “old Omiš Prošek” produced from the varieties of Pribidrag and Muscat roses from Omiš. This prosecco was made from dried grapes according to such and such a recipe.
