Valdespino, one of the oldest and only one of the few family producers in Jerez. Alfonso Valdespino was a knight who, along with King Alfonso X, fought for the city of Jerez against the Arabs in 1264. As a reward for his sacrifice, he was given land in Jerez. Today, Valdespino is owned by the Estevez family, who own 750 hectares of orchards and one of the few to operate a single vineyard Sherry wines.

After fermentation, Amontillado matures under a layer of yeast called ‘flor’ for more than 8 years. During aging, as the flor gradually dies out, oxidative processes slowly become dominant and Tio Diego continues for an additional 8 years of ageing before bottling. The nose is dominated by aromas of hazelnut, earth, dried fruit interwoven with threads of coffee, caramel and tobacco. The unique fusion of different aging techniques makes this Amontillado an almost magical wine.
