OPG Kalcina is a family farm specialising in producing extra virgin olive oil, located in a small town near Grožnjan, with 1500 olive trees. Surrounded by hilly relief, the olive grove enjoys an ideal microclimate that enables the flow of salty air from the sea and the retention of that air due to the hills behind the olive grove. In this way, everything is best preserved in the olive grove; thus, the olives have a high-quality aroma and polyphenols. Great importance is played by the Mediterranean climate, especially the microclimate, which enables the flow of salty air from the sea—the cultivation of varieties that are typical for Istria. Ever since the grandfather laid the foundation stone, the family has diligently and patiently developed the olive oil production business and set it to the current enviable level.

Carbonata olive is an autochthonous variety of olive from the Grožnjan area, which came to life thanks to the recovery of old trees left to their own devices after the great frost of many years ago. The fresh oil has a pronounced piquancy, bitterness and sweet taste. It smells like olive fruit. Carbonata oil has a light taste that goes especially well with various salads, fresh cheese, risotto with vegetables. They are also used in the preparation of cakes and even in combination with white chocolate ice cream.
