Saints Hills St. Roko 2018

Vineyards are in South Dalmatia, in Komarna and are planted in the upright cordon, with a density of 7.000 plants per hectare. This allows the winemaker to get most of the wind and sun, and the highest quality of grape. It is cultivated with small tractors, and by hand. Green harvest is done so that the crop never goes over 1kg per plant. Harvest is also done by hand. Grapes are being cooled down to 5°C in cooling rooms overnight before being sorted on sorting tables. This wine is fermented in big wooden vats and big concrete tanks. It is aged in 20%new French oak barriques, and partially in concrete, to preserve freshness, for 12-14 months. After that, it takes some time in the bottle before release.

Ruby red with purple nuances. Aromas of ripe tree fruit and berries, followed by plum, fig, and blackberry. Also, very intensive aromas of thyme and oregano, bourbon vanilla, finishing with woody aromas and leather. Full-bodied, layered texture dominated by plums and figs, and Mediterranean herbs with a well-balanced long finish.
