Pasji rep (Dog’s tail) is a biodynamic winery located in Vipava Valley in Slovenia. Pasji rep is one of the flagship wineries proving the elegance of Vipava, especially when their indigenous variety of “Zelen” is concerned. A single vineyard wine named after plot from where it is sourced. The name carries a provocative context in Slavic language, but the real intrigue is hidden inside the bottle. The content depends upon the vintage and it shows greatest depth and finesse in Merlot and Cabernet Franc blend. Hand picked organically grown grapes were destemmed, crushed and left in 228 L French barrels after spontaneous fermentation. Ageing potential is very serious although “Jebatschin” is very seductive in its youth as well 😀
