Hand-harvested grapes from a 33-year-old vineyard, at full phenological maturity, without elements of late harvest. Macerated for 6 days at a temperature of 20°C (68°F), then pressed and complete fermentation in 1000L wooden barrels (Slavonic oak) with malolactic fermentation. At the end of fermentation, the wine was on the lees without the addition of sulfur until the spring of 2021 with gentle stirring. In the spring of 2021, 30% of the wine went into barrique barrels for 6 months, after which it was bottled. It spent almost 2 years in the bottle before going on the market. The wine is elegant, rounded, lively with pronounced notes of stone and candied fruit. This Graševina is intended for enjoyment with smoked fish, aged cheeses and nuts.
